This approach promotes healthier trees, stronger root systems, and improved cherry development year after year. A washed coffee is processed to highlight the coffee's natural clarity, sweetness, and origin character. After only the ripest cherries are harvested, the fruit is removed from the seed and the coffee is fermented in water to break down the remaining sticky mucilage. It is then thoroughly washed and slowly dried before milling. This method produces an exceptionally clean, crisp cup that often showcases bright acidity, floral aromas, and distinct fruit notes unique to the coffee's terroir.
