  • Processing

Ripe cherries are harvested, ozone-disinfected, and anaerobically fermented in water for 36 hours. After pulping and demucilagination, a cultured fermentation medium is added under pressure in anaerobic fermentation for an additional 12 hours to enhance flavor precursors. A thermal shock process locks in these compounds, followed by controlled dehumidified drying to prevent over-oxidation.
